A super easy yet elegant side dish!400g medium-grain rice 1 lemon, juiced and grated zest1 cup (250ml) dry white wine 90g butter ingredients400g raw green prawns, ground black peppershelled and de veinedkg carrots, peeled and trimmed salt and pepper to taste2 tablespoons olive oil chopped parsley for garnish (optional)method 2 tablespoons honey1.Heat oil in a heavy-based saucepan over low heat, add leek, garlic, oregano and 1 teaspoon of salt, and gently saut until leek is soft (around 4 or so minutes).method2.Add rice, increase heat to medium, stir, add wine and cook for about 2 minutes.1.Preheat the oven to 200C.
